So I moved here from New Mexico and my wife and I love Mexican food… But we are used to cooking with New Mexico green and red chilies. Since we’ve moved to Louisiana we’ve noticed that people here love their Mexican food with queso on top instead of green and red chili. So I had to give it a try! I smoked some queso fried up some burritos turned them into some chimichangas and this is what I got! What are you guys think? Did I do it right??
